Old Fashioned Pancakes recipe

 
  image of an old fashioned pancake   This is how pancakes were made in the 1970's when they became all the rage for a brief time. Till now pancakes and waffles aren't big in Australian culture. I feel fortunate to come from a family where homemade pancakes were part of breakfast every Sunday. Along with liver, eggs and bacon in gravy, tripe in white sauce, steak and kidney and porridge. Those were the days! And we wonder why our fore fathers didn't live past 65. At least the pancake bit is something I have carried on in my family. I cook this old recipe from time to time. As I was raised on this recipe I like it a lot. A great retro recipe. Pure in ingredients and pure in taste. My kids still much prefer my later buttermilk version of pancakes.

Make sure you do the first step of rising the flour in warm milk. Do not over mix or they will end up heavy.

 
  1970's Pancake recipe      
  350g plain flour
1 cup of whole milk at 45°
1 egg yolk
3 Tbs sugar
1 Tbs vegetable oil
1 Egg white whisked stiff with 2 Tsp sugar
1 tsp Vanilla extract
  Sift the flour and only just loosely incorporate the warm milk and let stand 30 minutes. Do not mix into anything like batter at this step.

Whisk the egg whites and 2 tsp of the sugar together till stiff

Mix together the egg yolk, sugar, oil, and vanilla and add to the flour mix. Combine gently.

Fold in the egg whites.

Grease a moderate electric fry pan with butter or lard and cook till bubbles begin to burst. Flip and cook a further few minutes.
