350g plain flour
1 cup of whole milk at 45°
1 egg yolk
3 Tbs sugar
1 Tbs vegetable oil
1 Egg white whisked stiff with 2 Tsp sugar
1 tsp Vanilla extract |

Sift the flour and only just loosely incorporate the warm milk and let
stand 30 minutes. Do not mix into anything like batter at this step. Whisk the egg whites and 2 tsp of the
sugar together till stiff
Mix together the egg yolk, sugar, oil, and vanilla and add to
the flour mix. Combine gently.
Fold in the egg whites.
Grease a moderate electric fry pan with butter or lard and cook
till bubbles begin to burst. Flip and cook a further few minutes. |
